Serrano Ham

Like the Ibérico, a Serrano ham is a cured rear leg but from a white pork, usually of the Duroc breed, with different marbling and fat composition. From this category we have the ham under “Jamón de Trévelez” PGI (Protected Geographical Indication), which is exclusively obtained from crosses of the breeds Landrace, Large-White and Duroc-Jersey. All Serrano ham pigs are raised on vegetable feeds.

Our ham comes from the leg of the highest quality white, castrated male or female pig, selected for its soft, fatty meat. Whilst sea salt is used, the curing process and the special climatic conditions of the production area enable our ham to have low salt content.

The drying and curing process is done in a natural way using traditional methods. A long and natural curing process of over 14 months helps release the aromas and flavours.
