Butifarra is the name of the traditional Catalan sausages. There are two types: fresh, that must be grilled, or cooked (such as the Black or Perol), which can be eaten plain, grilled or added in stews. All have a deep, fatty flavour, but are also subtle and delicate – attributes that aren’t common in this type of product.

There are several to choose from, including typical raw butifarras, spiced, white, or innovative. Some top chefs even request their own development.
