Galician: From dairy cows of “Galician Blonde” breed raised free-range and fed on grass in Galicia (in north western Spain), which provides an unmistakeable flavour and texture.
The intense cherry red colour of the meat has a yellowish hue fat cover highlighting the intense lard aroma. It has a strong intensity and persistence flavour in the mouth with a lot of character and a fibrous texture. This is a beef recommended for meat lovers!
Dehesa: The dehesa is an ecosystem in which a wide variety of plant and animal species coexist. The mix of Retinta, Charolais and Limousine cow breeds enjoy the pastures all year round, feeding on grass and hay and reproducing freely. “Dehesa cow” meat is obtained from animals of more than 8 years old, which have a higher fat infiltration and superb organoleptic attributes. These features, combined with proper maturation, yield a meat with tenderness and flavour worthy of the most demanding kitchens.
