Milk-Fed Kid and Lamb

Lambs of the merino or “castellana” variety, bred and fed freely on the dehesas. Feeding these animals exclusively from their mothers’ breastmilk gives the meat a special juiciness and tenderness that earn it a privileged place among the delicacies of the dehesa.
