Green Paella (Paella de Verduras)
In our series of vegan recipes in accordance with the mediterranean diet we recommend trying this twist of the classic and iconic spanish Paella. Made with mushrooms and confited artichokes it is delicious, very satiating and full of health benefits.
Ingredients for 4 persons
- 4 Confit Artichokes
- 300 grams of mushrooms
- Vegetable broth
- 50g fried tomato sauce
- 400 grams of bomba type rice (Moli de Pais)
- Olive oil (100% Arbequina Olive Oil)
- Salt & Pepper
Fry the mushrooms and garlic, add the paprika and rosemary, add the rice and fry everything together.
Add the broth and the artichokes to cover (1 volume of rice for 2 of broth should be the right proportion).
Put 10 minutes over very high heat and 8 minutes over medium heat.
Let stand two minutes and serve with aioli.
